In July of 2022, our very own Sammy Citrano was inducted into the Texas Restaurant Association Hall of Honor. Sammy has worked endlessly on bettering George’s since he became sole owner in 1994. Sammy was one of two in the entire state to be inducted into the Hall of Honor this year, so we want to take the time to recognize everything he does for the George’s community.
The Hall of Honor is a long-standing Texas Restaurant Association tradition. This recognition is given to individuals who significantly contribute to the restaurant industry and the association itself. Qualifications include having a minimum of 15 years of membership in the TRA, demonstrating superior business ethics, and productive involvement in the TRA and its local chapter. Sammy Citrano is undoubtedly a prime example of these qualifications in the eyes of his fellow Wacoans.
Sammy has over forty-five years of restaurant experience, ranging from Steaks N’ Spirits, The Elite Cafe, and Health Camp. Besides owning George’s, Sammy has become a key part of people’s experience at the restaurant. You walk in and feel like you’re visiting family when Sammy walks by your table to say hello. Additionally, he works endlessly at keeping an updated interior and exterior of both locations, ensuring that there’s plenty of patio space and a clever mural outside.
Sammy has turned this family-run restaurant into a Waco hot spot, where Baylor students and fans, tourists, and locals love to enjoy a Saturday breakfast, chicken fried steak for a meal, or a Big-O to end their days. With employees that have stayed with George’s for over fifteen years, it’s no shock that Sammy creates a family out of his employees. He ensures that every single staff member is cared for and is in a place to succeed.
